Banana Cupcakes








I like bananas ,however when they get too ripe I tend to throw them away. Instead of doing that , they can be used for a variety of things like conditioning your hair or better add them to your cupcake mix.


Recipe 

2 Bananas
1/4 cup of Flaked Almond
1/4 Cup of Groundnut oil 
1 cup of Sugar
3 Eggs lightly beaten
1/4 Cup of Milo or any chocolate beverage 
2 cups of self -rising Flour ,sifted
1 Teaspoon of Baking powder
1 Teaspoon of Vanilla extract

For the Frosting

125 g(1 stick) of butter 
1 Cup of icing sugar
1 teaspoon vanilla extract


Method

 Preheat the oven to 180 degrees centigrade.

Mix all the dry ingredients together , add all the other ingredients  to the mixture, blend in a food processor until fluffy.
Pour the batter into your cupcake tin and bake for 15 to 20 minutes depending on your oven .
To see if your cupcake is ready, insert a toothpick into the center  , it should come out clean.
Set aside to cool on a cooling rack.



for the butter cream icing
beat the butter until fluffy and white, add the sugar and vanilla extract and beat until you get the required consistency.

Decorate your cupcakes with sprinkles and marshmallows or whatever you fancy.
